1901 Ham and Eggs Recipe

Enjoy what would have been a breakfast staple in the Gilded Age - ham and eggs with a twist.

 

Ingredients:

Half ham, unsliced

Eggs, one per person

Bread or muffin (optional)

Garnishes - (see below, optional)

Butter or olive oil 

 

Instructions:

Cut off the rind of the ham, and cut the ham into equally thick slices.

Melt butter or olive oil in a pan, allowing to melt. Place ham slices in the pan, in batches if needed, to avoid overcrowding. 

Turn each slice two or three times to allow for browning of the ham slices.

When finished, place the ham slices on a separate dish and keep warm while preparing the eggs.

Either poach or fry each egg, your choice of final preparation.

To assemble, place a slice of ham on each plate and top each slice with an egg. 

(Optional) If desired, place the ham atop a slice of bread or muffin (as shown here). Your ham slice can also serve as the base, without the bread option.

If desired, place a spring of parsley, a wedge of orange, or sprinkled shaved cheese on top.
