Gilded Age Style Salmon Croquettes: Recipe

A staple of Gilded Age kitchens and holiday picnic menus alike, salmon croquettes have remained beloved for generations thanks to their crisp exterior, tender center, and simple elegance. 

Often served cold or warm alongside salads, biscuits, and fresh summer vegetables, these savory patties were a favorite at festive outdoor gatherings and family suppers. More than a century later, they still bring the same sense of comfort, practicality, and timeless charm to the table.

Salmon Croquettes (1901 Style)

 

INGREDIENTS

  • 1 lb cooked salmon
  • 2 cups mashed potatoes
  • 1 egg
  • 1 tsp parsley
  • ½ tsp dry mustard
  • Salt and pepper
  • Bread crumbs

 

INSTRUCTIONS

  • Flake salmon.
  • Combine with potatoes, egg, parsley, mustard, salt, and pepper.
  • Shape into rounded or oblong patties.
  • Roll in breadcrumbs.
  • Saute until golden.
  • Cool completely before packing.

 

Serve with cucumber relish or lemon wedges, perhaps sprinked with small bits of bacon.
